The santoku is a Japanese chef’s knife.  This knife is great for mincing, chopping, and slicing large quantities of vegetables and meat.  This smaller knive offers a lot of control and the J.A. Henckels Twin Professional S (or Pro S) knife series is always trustworthy with classic styling.  The 7" hollow edge blade allows you to slice paper-thin without the annoying habit of vegetables to sticking to the sides.  It's made from high-carbon stainless steel and features a friodur ice-hardening process to strengthen the knife and prevent staining.
