What's more, honey is thicker in texture and sweater in density.  You'll use a smaller quantity than you would sugar to option the same sweetness. Honey is also hygroscopic, meaning it absorbs moisture and makes for less dry baked goods and a more satisfying flavor. Honey is especially powerful when applied to fruit.  It's best to use an even smaller amount than normal when sweetening your favorite berries with honey.
