Ready to take on more high-intensity training sessions at the gym? You’ll need to eat for high energy, won’t you? But you’re not stuck with energy bars. You can indulge with delicious steak if you like. This recipe features all sorts of energy-boosting ingredients. And, it serves 2 people, so if you want to treat your gal to a special evening, this is the recipe you want. Extra energy, remember? Plus it’s ready in about 30 minutes and weighs in at 300 calories per serving. Brilliant.
For the dressing:
- 1 small stalks Green onion, finely chopped
- 2 tablespoons Fresh orange juice
- 2 teaspoons Rice wine vinegar
- 1 teaspoon Honey
- 1 teaspoon Extra virgin olive oil
- pinch of salt and pepper
For the steak and salad:
- 1/2 pound Flank steak
- 1 tablespoon Prepared horseradish
- 4 cups Lettuce and mixed greens
- 1 medium Orange, peeled and sectioned
- 1/2 medium Red onion, thinly sliced
Preheat the broiler on your oven.
Whisk together all of the ingredients for the dressing and set aside. (Hint: a super-easy way to this is to shake all the ingredients in a container with a fitted lid.)
Place steak on a broiler pan and broil for about 10 minutes, turning once. (If you have a meat thermometer, it should read about 140ºF for medium-rare.) Remove from the oven, spread the horseradish over the top and place under the broiler for an additional minute. Remove from the oven and allow the meat to rest for 10 minutes.
Meanwhile, divide the lettuce and greens between 2 plates along with the orange sections and onion slices. When the steak is ready, slice it and divide the meat between the 2 plates. Drizzle over the dressing.
