It’s hard to resist the temptation of fried foods, especially all those delicious hot wings at the bar. But, you can make a few substitutions to the cooking process to transform your favorite fast foods into healthier home meals. Take these wings; the simple act of baking instead of frying them cuts the fat dramatically. Just about anything you make at home is going to cut the fat and other nasties that you’d get at a fast food or casual dining restaurant. It works for hamburgers, burritos, pizzas and definitely these wings. Always choose the healthiest cooking method, and you can call it a healthier version; if not exactly healthy.

Ingredients:

For the wings:

  • 25 each Chicken wings
  • 6 cups Water
  • 3 tablespoons Kosher salt
  • 1 tablespoon Onion powder

Marinade:

  • 1/2 cup Cilantro, finely chopped
  • 4-5 tablespoons Oil
  • 3 cloves Garlic, minced
  • 1 tablespoon Onion powder
  • 1 teaspoon Paprika

Hot sauce:

  • 1 cup Hot sauce (the hotter, the better!)
  • 1 tablespoon Butter (optional), melted

Preparation:

Brining the wings isn’t strictly necessary, but it will make all the difference if you’ve got the time. Remember, the idea is to develop the flavors without adding extra fat - a good brine will do that.

Prepare the wings by cleaning them (and clipping the wings if necessary). Add wings to a large bowl. Mix the brine ingredients and pour this over the wings. Make sure all of the wings are immersed, then cover your bowl and leave it in the fridge for a few hours. Overnight is better.

When you’re ready to get cooking, preheat your oven to 425ºF. Drain the liquid and pat your wings dry. Cover a baking tray with tin foil (shiny side up). You don’t have to do this, but when it comes to cleaning up, you’ll be thankful you did. Arrange your chicken wings on this tray. Prepare the marinade by adding ingredients to a food processor, or simply chopping cilantro as fine as possible and mixing everything together. Spread this on your wings. Bake wings for about 20 minutes. Then turn, brush with marinade and bake on the other side for 15 minutes longer. When they’re cooked through, place in a large bowl with the hot sauce and butter. Toss to combine well and serve with celery sticks.
